Ingredients
1 lb flank steak or skirt steak
2 tablespoons olive oil
2 tablespoons lime juice
3 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
½ teaspoon oregano
½ teaspoon salt
½ teaspoon black pepper
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 large onion, sliced
1 tablespoon olive oil (for vegetables)
2 cups cooked rice (white or brown)
1 tablespoon lime juice (for rice)
1 tablespoon chopped cilantro
½ cup black beans
½ cup corn kernels
1 avocado, sliced
½ cup cherry tomatoes
¼ cup sour cream or Greek yogurt
¼ cup shredded Monterey Jack or cheddar cheese
Fresh cilantro for garnish
Lime wedges for serving

In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, and black pepper. Mix well to create the steak marinade.

Add the flank steak to the marinade and coat evenly. Cover and marinate for at least 30 minutes or up to 4 hours for deeper flavor.

Cook the rice according to package instructions. Once cooked, stir in lime juice and chopped cilantro to create cilantro lime rice.

Heat a cast iron skillet over high heat. Add the marinated steak and cook for about 4 minutes per side until a dark crust forms and the steak reaches medium-rare. Remove from heat and let rest for 5 minutes.

In the same skillet, add olive oil and sauté the sliced peppers and onions over high heat until slightly charred and tender. Season lightly with salt and cumin.

Slice the steak thinly against the grain to keep it tender.

Assemble the Steak Fajita Bowl by adding rice to the bowl first. Top with sliced steak, sautéed peppers and onions, black beans, corn, tomatoes, and avocado.

Finish the bowl with sour cream, shredded cheese, fresh cilantro, and a squeeze of lime juice.
Notes
For the best Steak Fajita Bowl, always cook steak in a very hot skillet to create a flavorful crust. Let the steak rest before slicing so the juices stay inside the meat. Slice against the grain to keep the steak tender. Do not overcrowd the pan when cooking peppers and onions; high heat helps caramelize the vegetables and creates the classic fajita flavor.
