- 2 chicken breasts, sliced
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 2 cups chicken broth
- 1 cup heavy cream
- 250g pasta (penne or fettuccine)
- 1/2 cup grated Parmesan cheese
- 1 bell pepper, sliced (optional)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium-high heat.
- Season chicken with Cajun seasoning, salt, and pepper, then cook until golden and fully cooked. Remove and set aside.
- In the same pan, sauté onion until soft, then add garlic and cook briefly.
- Add pasta, chicken broth, and cream. Stir and bring to a simmer.
- Cook until pasta is tender, stirring occasionally.
- Return chicken to the pan and mix well.
- Stir in Parmesan cheese until melted and creamy.
- Add bell peppers if using and cook for a few minutes.
- Adjust seasoning and serve warm.
Notes
- Use freshly grated Parmesan for the best creamy texture.
- Adjust Cajun seasoning to control spice level.
- Add a splash of broth when reheating to keep it creamy.
- You can substitute chicken with shrimp or sausage.
