Ingredients
2 tablespoons sesame oil
1 ½ pounds boneless skinless chicken thighs, cut into bite-size pieces
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
¼ cup low-sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon rice vinegar
2 tablespoons honey
1 tablespoon toasted sesame oil (for finishing)
1 ½ cups jasmine rice, rinsed until water runs clear
2 ½ cups low-sodium chicken broth
1 cup shredded carrots
1 red bell pepper, diced
3 green onions, sliced
1 tablespoon sesame seeds
Instructions

Heat sesame oil in a large heavy skillet or Dutch oven over medium-high heat.

Add chicken in a single layer. Season with salt and pepper. Sear 4–5 minutes until golden brown but not fully cooked through.

Reduce heat to medium. Add garlic and ginger. Cook 30 seconds until fragrant.

Stir in soy sauce, oyster sauce, rice vinegar, and honey. Simmer 1 minute.

Add rinsed jasmine rice and chicken broth. Stir gently to combine.

Mix in shredded carrots and diced bell pepper.

Bring to a gentle boil, then reduce heat to low. Cover tightly and simmer 18–20 minutes. Do not lift the lid.

Remove from heat and let rest covered for 5 minutes.

Fluff rice with a fork. Drizzle toasted sesame oil over the top.

Garnish with green onions and sesame seeds before serving.
