Ingredients

For the Coconut Shortbread Crust
1 ½ cups all-purpose flour
½ cup sweetened shredded coconut
½ cup unsalted butter, softened
¼ cup granulated sugar
¼ teaspoon fine sea salt

For the Lime Filling
3 large eggs, room temperature
1 cup granulated sugar
⅓ cup freshly squeezed lime juice
1 tablespoon lime zest
2 tablespoons all-purpose flour
¼ teaspoon baking powder
Pinch of salt

For the Mint Glaze
1 cup powdered sugar
1–2 tablespoons fresh lime juice
1 tablespoon very finely chopped fresh mint
1 teaspoon milk (if needed for thinning)

Instructions

  • Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy removal.

  • In a mixing bowl, cream butter and sugar until light and fluffy.

  • Add flour, shredded coconut, and salt. Mix until crumbly but combined.

  • Press the crust mixture firmly and evenly into the prepared pan.

  • Bake for 15–18 minutes, or until lightly golden and fragrant.

  • While the crust bakes, whisk eggs and sugar until smooth and slightly thickened.

  • Add fresh lime juice and lime zest. Whisk until combined.

  • Sift in flour, baking powder, and salt. Mix until smooth and lump-free.

  • Pour lime filling over the hot crust.

  • Return to oven and bake for 18–22 minutes, until the center is set but slightly jiggly.

  • Cool completely at room temperature, then refrigerate for at least 2 hours.

  • For the mint glaze, whisk powdered sugar, lime juice, and chopped mint until smooth. Add milk if needed for a spreadable consistency.

  • Spread glaze evenly over chilled bars. Allow to set for 20–30 minutes before slicing.

 

  • Lift from pan using parchment and cut into squares with a sharp knife
