1 lb ground beef (80/20 recommended)
2 cups cooked jasmine rice
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low sodium soy sauce
2 tablespoons brown sugar
1 tablespoon sesame oil
1 teaspoon rice vinegar
1 teaspoon chili garlic sauce (optional)
1/2 teaspoon black pepper
2 green onions, sliced
1 teaspoon toasted sesame seeds

1/2 cup shredded carrots
1/2 cup sliced cucumber
1/2 cup steamed broccoli
1 fried egg
1 tablespoon sriracha sauce
extra sesame seeds
kimchi

Instructions

  • Cook the rice according to package instructions and keep warm.

  • In a small bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, chili garlic sauce, and black pepper. Set aside.

  • Heat a large skillet over medium-high heat. Add the ground beef and cook for about 5 to 6 minutes, breaking it apart with a spatula until browned.

  • Add minced garlic and grated ginger to the beef. Cook for about 30 seconds until fragrant.

  • Pour the prepared sauce over the beef and stir well. Reduce heat to medium and simmer for 2 to 3 minutes until the sauce thickens slightly and coats the meat.

  • Stir in sliced green onions and remove from heat.

 

  • Assemble bowls by adding warm rice, topping with Korean ground beef, and finishing with desired toppings such as carrots, cucumber, broccoli, sesame seeds, or a fried egg. Serve immediately.

Notes

For best flavor use ground beef with some fat such as 80/20. Lean beef may result in a slightly drier texture.
Adjust sweetness by adding more or less brown sugar depending on your preference.
For a spicy Korean ground beef bowl, add extra chili garlic sauce or gochujang.
This recipe is perfect for meal prep and stores well in the refrigerator for up to 4 days.
