Ingredients
1 ½ pounds sirloin steak, cut into 1-inch cubes
4 tablespoons unsalted butter
1 tablespoon olive oil
5 cloves garlic, minced
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Optional
½ teaspoon smoked paprika
½ teaspoon red pepper flakes
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice

Pat the steak dry with paper towels and cut it into even 1-inch cubes. Season with salt and black pepper.

Heat a large cast-iron skillet over medium-high heat. Add olive oil and allow it to heat until shimmering.

Place the steak cubes in the pan in a single layer. Do not overcrowd the skillet. Sear for about 2 minutes without moving until a golden crust forms.

Flip the steak bites and cook for another 1–2 minutes until browned but still juicy inside.

Reduce heat to medium and add the butter and minced garlic. Stir gently while the butter melts and becomes fragrant.

Toss the steak bites in the garlic butter so every piece is coated in the sauce. Cook for about 1 minute.

Remove from heat and sprinkle with fresh parsley. Serve immediately while hot and juicy.
Notes
Use a very hot skillet to create a deep golden sear on the steak bites. Avoid overcrowding the pan or the meat will steam instead of brown. Fresh garlic produces the best flavor for garlic butter steak bites. For extra richness, use ribeye steak instead of sirloin. These steak bites cook quickly, so avoid overcooking to keep them tender and juicy.
