Ingredients
2 boneless skinless chicken breasts (about 1.5 pounds)
1 medium yellow onion, diced
3 cloves garlic, minced
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn, drained
1 (14.5-ounce) can fire-roasted diced tomatoes
1 (10-ounce) can diced tomatoes with green chilies
4 cups low-sodium chicken broth
1 tablespoon tomato paste
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon sea salt (adjust to taste)
¼ teaspoon black pepper
Juice of 1 fresh lime
Optional Toppings:
Baked corn tortilla strips
Diced avocado
Fresh chopped cilantro
Greek yogurt or sour cream
Shredded Monterey Jack cheese
Sliced jalapeños
Instructions

Layer the aromatics
Place diced onion and minced garlic at the bottom of the crockpot. This creates a flavorful base for your Crockpot Chicken Tortilla Soup (Healthy Weeknight Meal). -
Add the chicken
Lay the chicken breasts on top of the onion mixture. -
Add remaining ingredients

Slow cook

Shred the chicken

Finish with lime
