  • Total Time: 27 minutes
  • Yield: 24 cookies

Ingredients

Scale
  • 1 cup (227g) unsalted butter, melted and cooled

  • 1 cup (200g) packed light brown sugar

  • ½ cup (100g) granulated sugar

  • 2 large eggs, room temperature

  • 1 teaspoon pure vanilla extract

  • 1 ½ cups (180g) all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt

  • 3 cups (270g) old-fashioned rolled oats

  • 1 cup (150g) raisins

  • Optional: ½ cup (75g) chopped walnuts or pecans

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and slightly glossy.

  • Beat in eggs one at a time, then mix in vanilla extract until fully combined.

  • In another bowl, combine flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients and mix until just combined.

  • Fold in rolled oats, raisins, and nuts (if using). Dough should be thick and slightly sticky.

  • Chill dough for 30 minutes to 1 hour to prevent spreading and enhance chewiness.

  • Scoop dough into balls and place 2 inches apart on prepared baking sheets.

  • Bake 10–12 minutes until edges are golden brown and centers are set but soft.

  • Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely

Notes

  • Chilling dough improves thickness and texture.

  • Slightly underbake for soft, chewy centers.

  • Use old-fashioned oats, not instant, for best chewiness.

  • Brown sugar is essential for moisture and flavor.
