1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

3 cups (270g) old-fashioned rolled oats

1 cup (150g) raisins

Optional: ½ cup (75g) chopped walnuts or pecans
Instructions

Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and slightly glossy.

Beat in eggs one at a time, then mix in vanilla extract until fully combined.

In another bowl, combine flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients and mix until just combined.

Fold in rolled oats, raisins, and nuts (if using). Dough should be thick and slightly sticky.

Chill dough for 30 minutes to 1 hour to prevent spreading and enhance chewiness.

Scoop dough into balls and place 2 inches apart on prepared baking sheets.
