  • Total Time: 27 minutes
  • Yield: 4 servings

Ingredients

Scale

1 lb ground chicken
1/2 cup panko breadcrumbs
1 large egg
2 tablespoons green onions, finely sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon soy sauce
1 teaspoon sesame oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Teriyaki Sauce

1/3 cup soy sauce
1/4 cup honey
2 tablespoons brown sugar
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon sesame oil

Optional Garnish

Sesame seeds
Sliced green onions

Instructions

  1. Preheat the air fryer to 380°F (193°C) for 3 minutes.

  2. In a large bowl combine ground chicken, panko breadcrumbs, egg, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper.

  3. Mix gently until just combined. Do not overmix to keep the meatballs tender.

  4. Shape the mixture into 1-inch meatballs using your hands or a small scoop.

  5. Place the meatballs in the air fryer basket in a single layer.

  6. Cook for 10 to 12 minutes, shaking the basket halfway through, until the meatballs are golden and reach an internal temperature of 165°F.

  7. While the meatballs cook, prepare the teriyaki sauce. In a small saucepan combine soy sauce, honey, brown sugar, rice vinegar, garlic, and ginger.

  8. Bring to a simmer over medium heat.

  9. Mix cornstarch with water to create a slurry, then whisk it into the sauce.

  10. Cook for 1–2 minutes until the sauce thickens and becomes glossy. Stir in sesame oil.

  11. Transfer the cooked meatballs to a bowl and toss with the warm teriyaki sauce until fully coated.

  12. Garnish with sesame seeds and green onions before serving.

Notes

Do not overcrowd the air fryer basket to ensure even cooking.
Fresh ginger and garlic greatly enhance the flavor of the teriyaki sauce.
For extra caramelization, brush a little teriyaki sauce onto the meatballs during the final 2 minutes of air frying.
These meatballs are perfect for meal prep and can be refrigerated for up to 4 days.
